Listo y a disfrutar!

EN:I don´t know about you, guys, but whenever I have a bad day,or I´m worried about something,os just need some time for myself,I cook. This is the best thing about cooking.Doesn´t matter how long the day has been, doesn´t matter if things didn´t turned out the way I expected,I know that when I get home,I can poor myself a glass of wine, listen to Nina Simone and cook,no recipes. At times like this, the results are dishes like this one. It´s not a state of the art dish, doesn´t have any special or expensive ingredients,it´s more like an old school recipe, and even though the photo does not give any justice, trust me,it was delicious!
It has a lay of mashed potatoes, spiced with five chinese spice powder(cinnamon, ginger, clove, anise and anise seeds),a lay of steamed broccoli, some ham diced and sprinckled,a lay of bechamel sauce and oven for 15 to 20 minutes. And there you go,ready to enjoy!
P.S:you can change the broccoli with cauliflower and the ham with chicken breasts.

EN:Some of you might of noticed my absence of blogging .The main reason is simple:I am currently in the process of changing apartments, and for those of you who already lived this experience...well,you know exactly how messy this situation can be.Almost all of my belongings are already kept in boxes and even though it might be an oportunity to bid your stuff and let go of things you really don´t need, the whole process cand be pretty exhausting. So,whith almost no cooking utensils,my cooking repertoire reduces to half. This sunday I wanted to use a pack of puff pastry I had in my freezer so I made crackers. It´s as easy as lay it out,cut it into sticks and spread it with whatever you want.
I can´t believe I never did this before whith puff pastry. The only challenge is the election of dressings, but that´s all about your personal taste.I used several dressings .One made whith olive oil and curry, another one made with eggs, cheese and basil and another one made with several spices(don´t remember,I improvised)and fresh chopped garlic.Oven for 10 to 15 minutes to 220ªC and ready to enjoy.
What about you?Care to try out puff pastry crackers?

EN: It´s my favorite spice,I have a huge variety of spices in my kitchen, but let´s face it,there´s nothing like cinnamon. When I found this sponge cake recipe, lots of years ago,it becomed immediately one of my favotires,so I make it every fall or winter.Personal trick for this dessert?Dr.Oetker essence capsule for confectionary. In this case I used a rum capsule, but if you prefere you can soak the raisins in real rum for a couple of houres and the result will be similar, although less intense.Hope you fall in love with this recipe same as I did,and hope you enjoy it,my dearest gourmet!

Cand am gasit aceasta reteta, acum ceva ani,s-a transformat in reteta mea de chec preferata,si acum o fac in fiecare toamna sau iarna.

 -350g harina
-1 sobre levadura en polvo
-1 cucharada canela(yo soy generosa)
-150g mantequilla o margarina troceada
-125g azúcar moreno
-175g pasas Corinto
-la ralladura de una naranja
-6 cucharadas zumo naranja
-6 cucharadas leche
-2 huevos ligeramente batidos

I am delighted to show you this recipe.I collect recipes, and chocolate chapter is by far,the most generous in my archives.Coulants are one of the most easy to make desserts. They can be spongy on the inside, just like the ones on the foto,or liquids,if you froze the inside before baking them.It depends on each oven, but 10 to 15 minutes is the aproximate time they need for baking. My oven is in the age of retirement, but we still understand each other. Some other time,I´ll make them liquids on the inside, just so you can see the difference. This is how I wanted them this time, creamy and filled with rum and raisins.Hope you make them at home. They´re delicious, word!

If we had to collect some typical fall dishes, the ones you regularly eat with a spoon would have a privileged place on the menu.In my kitchen, the veggie cream is a must have during the cold season,in all its variety. The recipe I´m about to show you(as some of you asked) is the most basic of them all,and one of my favorites.I normally add cream cheese,Philadelphia type, but cream or butter are a very good option also,it all depends on youre palate. How about you?How do you cook your veggie cream?

The ones that know me are aware of the fact that I am a traditional person, and one of those traditions(inherited from my family too) is baking sweets every sunday.I guess many of you share the same habit.I myself am incapable of buying pastry,I rather wait untill sunday, rescue old recipes and bake them myself. My mom gave me this old tea biscuit recipe, and even though the result isn´t as good as hers,I had a lot of fun making the biscuist and enjoying one of my chilhood favourites sweets.
Basic paste recipe is very easy. The filling is a gummy delicacy made with starch and sugar and it´s called Rahat lokum. It´s a turkish sweet, ideal for baking cookies, sponge cakes and other sweets. Here I give  you the link so you get an ideea. You can purchase this sweet in specialized stores or international ones, like I did.

Ingredientes :
-150g mantequilla
-150g yougur
- 1 huevo
- 2 cucharras azúcar glassé
- 1 pizca de sal
- 1 sobre levadura
- 1-2 sobres azúcar avainillado
-600g harina

Ingredients:
-150g butter
-150g yogurt
-1egg
-2 spoonful of milled sugar
-bit of salt
-1 pack of baking powder
-1-2 packs of vanilla sugar
-600g flour

How to do it:
We mik together the butter, sugar, vanilla sugar, the egg,the baking powder mixed with lemon zest, and afterwards, the yogurt. Then we add the flour and we mix until we obtain a solid paste, same as bread. We take pieces of this paste and we extend it until forming a circle of 1-2mm thickness. With the help of a plate and  a cutter(like the one you use for pizza) we cut a circle and then we cut this circle into 8 pieces, just like a pizza. We put a piece of rahat on top of each slice and roll over until croissant shaped. We pass it to a baking tray and oven to 200ºC for 20-25 minutes. While still warm bathe in milled sugar and set aside until serve.
Well, hope you liked it and I can´t wait to listen to your opinions,my dearest gourmets!

Easy fish

Fast and low cost lunch or dinner is my specialty. The lack of time doesn´t allow me to develop a dish as much as I want it to,so that´s why the oven is the best ally in my kitchen. This is a recipe I cook a lot,it´s very easy to make and allowes you to use your imagination as much as you want.

Ingredientes:                                                  Ingredients:

- filetes de pescado blanco(dorada, lubina, panga, etc)          -white fish filets(such as bass, halibut, sole, etc)
-patatas hervidas y cortadas en rodajas                              -boiled potatoes, cut in slices
-mostaza Dijon                                                                  -Dijon mustard
-brócoli y coliflor                                                               -broccoli and cauliflower
-sal,pimienta                                                                      -salt and pepper
-aceite oliva                                                                       -olive oil

How to do it:

Fish filets have to be clean and stings free.We place them in a greaser baking tray, beter if cristal. We sprinkle salt and dark pepper over them, smear them with mustard and carefuly place the potatoes slices on top of the fish.Dress it all with olive oil(I used mine aromatized with red pepper and rosemary, recipe here),and bake in preheated oven at 200ºC for about 15 minutes.
You can cook your veggies however you want, mine were roasted and dressed with olive oil and lemon zest.Easy, yummy and healthy, don´t you think?

Galia

It´s september, and melancholy steps foot into our lives.Summer will soon be gone and going back to school, work or daily rutine is soon to be our piority.I myself am very found of fall and can´t wait to cook roasted apples and pumpkins, veggie creams, chocolate cakes and plenty of other dishes, that don´t really work with all this heat. There is no summer without ice-cream and no fall whithout home-made jams made out of mellow fruits.
As a child, whenever fall arrived,my grandma´s kitchen was fulled whith wonderful flavores:home-made bread, bitter cherry, blackberries or dark plums jam, cherry compote, from the same cherry tree next to my grandma´s kitchen where our grandpa used to hang a swing for us kids year after year.
I have great memories from my childhood,I grew up without internet, surrounded by simple things, but above all by plenty of scents and flavores, and let´s be honest, they shed a bit as time goes by.And because tradition is big deal in my family, because is time for jam and because is still hot outside, today we have vanilla melon jam served with your favorite ice-cream as a dessert.
Here´s my recipe! Oh,and one more thing, hope you enjoy it!

Ingredientes:

-1kg melón Galia
-500g azúcar
-2 vainas vainilla

Ingredients:

-1kg Galia melon
-500g sugar
-2 vanilla baton
-1 jelly powder pack(9g)
-the zest of 6 lemons

How to do it:

First we clean the melon and cut the fruit into pieces. In a pot,we mix the melon, the jelly and the lemon zest and we cook until boil.It will loose a white foam that we will remove. Then we add the sugar and the inside of the vanilla baton. We do so by cutting the baton on its longitude and take out the creamy vanilla inside with the tip of our knife. We let it boil together for about 5 minutes.Reserve until cool and keep in clean jars.It will be liquid at first but not to worry:the pectin of the fruit(it´s what makes the jam go thick)takes 12 houres to loosen.Once cooled keep in your refrigerator.

When you think on mediterranean cuisine, first thing that comes to your head is,without a doubt, the olive oil.Virgin extra olive oil is my favorite,I love its strong flavor and I can´t imagine a dish of pasta or a simple vinaigrette without it.Today I want to talk to you about aromatic olive oils. They never miss from my kitchen, specially if I cook pasta, but most of the times I end up using them for almost everything I cook. You can aromatize them in many ways:using spice pepper, garlic, aromatic herbs(dry or fresh),bay leafs, ginger, truffles, boletus and so on.I even aromatize olive oil one using a bouquet garni, although it is used more on sauces or roasted dishes.A bouquet garni is,for those who don´t know yet,a simple bouquet made out of dried herbs such as bay leafs, rosemary, thyme and basil, although its variety depend basically on your taste.

There you have my two aromatized olive oils:one made with garlic, and the other made with bay leafs, spice pepper, dark pepper grains and fresh rosemary. You have to close the bottles and do not open them for two weeks before using.Hope you enjoy! How about you?How do you aromatize your olive oils?

Te animo a probarla!

Saquitos de verduras

Ingredientes:

-2 cucharadas aceite de oliva
-1 pimiento rojo,limpio y troceado
